I really enjoy this chicken ravioli soup. It is easy and fast to prepare, you can also add some onion and more chicken. With this recipe being so simple you really can add on lots of fresh vegetables of your choice. This recipe actually makes a good base for adding practically any vegetables. Sometimes I add some cut up fresh tomatoes too, I figure the more vegetables we add the healthier the soup.
Anyway, lets get started with our chicken ravioli soup recipe.
Ingredients
- 8 Cups Chicken Broth or Stock
- 1/2 Cups Diced Carrots
- 1/2 CupsĀ Diced Celery
- 2 Cups Refrigerated Mini Cheese Ravioli
- 1 Cup Cooked Chicken – Diced
- Salt and Pepper
Directions
- Heat stock to boil. Then add all the vegetables.
- Turn down to simmer til vegetables get soft, about 20 minutes.
- Add the ravioli’s and cook another 5 minutes.
- Stir in chicken. Add some salt and pepper.
Notes: This is a quick meal. It is a great way to use up some leftover chicken. There are so many recipes out there for chicken soup. I loved this one because I had most of the ingredients on hand. I just had to purchase the refrigerated ravioli’s and wah-la a neat spin on chicken soup.
What is also nice about the refrigerated ravioli is that they come in many flavors. You have spinach filled, chicken, beef, crab, shrimp, sausage and even other cheese blends. You could also just use the plain pasta, like tortellini’s instead of filled ravioli.
